As far as the exact difference in hydralic routing - I have no idea. But practically speaking the tranny is not automatic anymore - it's like a clutchless manual. You select the gear you want, and it stays in that gear until you shift - up or down.

Yep - the torque converter takes care of any stalling issues - it still slips, etc. - it's just like your automatic now, except the computer has no part in selecting the gear - you take that role over.

You can get a manual valve body for just about anything. Yes, even the 4L60E.
Why do we even have manuals? Fun factor, the challenge, better fuel mileage, personal preference, etc,etc,etc...
