Yeah, the block plug easily taps to 1/2' NPT. From there you can adapt it to just about anything.
People keep trying to put mechanical gauge senders in the head, but like you will find out 12 mm is so small that any adapter you use will put it too far outside the head. For a 3/8 sender you can drill and tap the head to fit. Don't go larger than 3/8 in the head though.
For larger senders it is better to do some alternate location like the WP, block or even into one of the radiator hoses.

Gary--
Why did you go 1/2" NPT? Is your temp sensor not a 3/8 NPT? I'm trying to figure out where to put mine now. Do you have a pic of the location? Based on the above I'm giving up on the adapter and wanting to decide the safest place to drill and tap with the engine in the car (but not coolant in it).

On my 68 corvette swap, the sender was 1/2" NPT, easy choice.
If you look at it, it's an allen head plug. If you drill the center for 1/2 NPT, it barely removes the 6 flats inside and gives a lot of material to thread.
Just flatten two opposite sides of the plug flange so you can put a wrench on it and tighten.
No pics, but it's the brass plug in the block under the #7 cylinder.

tool
If you do not have the correct size allen wrench, go thru your bolt assortment for a bolt head that fits the allen socket, double nut it, tack weld the double nuts, and you have your removal tool......

Just want to make sure I have a clear understanding because I don't know all the ins and outs if gauges, sending units, elec vs mechanical yet.
I can use the autometer water temp gauge I had on my SBC (gen 1) mechanical gauge ( hard wire direct to a probe screwing into a port) by taping that plug for the right NPT?
If so that would be a nice savings of a few more bucks..
