Opened the hole in the manifold and the engine ran clean again.

When i removed my EGR, it didn't affect my car at all as far as how it ran.

Might be worth removing the PCV and plugging that hole then re-try (Evap hole plugged). You may be sucking oil into the intake and burning that?

After a minute or so on tick over, the fuel pump starts working harder until the fuel pressure drops to 58 psi and at the same time the engine cuts out.
I presume that if the gauge is correct the engine could be running too much fuel, hence the smoke. Unplugging the evap hole may be allowing more air in and allowing the engine to run leaner.
Just a theory, but does it make any sense?
Does sound as if the regulator could be suspect. Might also be worth removing the filler cap to remove any chance of a blocked fuel tank breather causing the problem. Or maybe a hose collapsing therby causing loss of fuel (hence speeding up the pump) - straw clutching maybe?

98-02 F-bodies and 99+ vettes don't have the regulator on the rail and you have to use a different regulator, a lot of guys use the 99-03 Corvette regulator.
