is that similar to my dad's street rod motor you guys built? it was an LS7 head and cam combo on top of a 454 LSX. it did have a FAST TB and LS7 carb style intake.

is the LS7 block you will use will be resleeved? what are the bore size and stroke?

can you do the same thing with a LS2 block?

If Darton sleeves the block, all LS2/LS7 Gen IV blocks end up really close to being the same thing as the final usable product. Gen IV blocks can be wet or dry sleeved with good results, with dry sleeves being a tad more economical than the MID darton sleeves. The Darton dry sleeves are stronger than the factory LS7 sleeves which are prone to cracking if not careful. The MID sleeves are the strongest option for sleeved aluminum blocks. Talk to Steve at Race Engine Development for the best sleeve work.

I always have attributed the step in C6 Z06 graphs to be associated with the exhaust baffle system, you can hear it open during the pull, never really cared to look into disabling it.

Sorry David, I didn't even see your post! I've installed quite a few different setups, but a milder sized camshaft would make something along the lines of mid 500's+, it really depends on the cam and desired compression. The few cam-only/bolt-on setups I can think of were in the 525rwhp range, most C6 Z06 customers get heads at the same time though.
