Ideal turbo?
With no real information we can't give any real advice. What does 800+ mean? What is the motor combo? Rpm?
You can go smaller or with smaller housings if right around 800 crank is your goal. But if you want 900 950 1000 1050... they would all be different recommendations to get the most out of response. IMO T4 turbos don't belong on any v8. But some disagree. I drag race and have a trans brake so "spool" isn't important to me personally. I'm in boost and ready to go as soon as I release the trans brake.
I'd go with the 4L80E for simplicity and cost.

Are you only wanting a single turbo? What fuel are you running?
I wouldn't consider anything other than a 80 at this point, unless it was a all out drag car that a 2spd would work in, JMO.
