I would go with a mid frame T6 turbo, maybe a 76 to a 80, would make 700HP easy and you can turn it up which we all end up doing. My BW FIS 95/96 1.32 T6 mid frame is good to 1100 I think.
Best price, most versatile, easiest to package, fast spooling, and will meet the needs of the vast majority of what people are looking for.
With that said, I would still heed John's advice, a lot of folks buy the 7875, lean on it, find its limits, and then end up spending a lot more money upgrading to a T6 setup when they should've started there to begin with.
I speak from experience in this case, my last car was a 7875 six speed car, it was great, made 700whp, but left me wanting more and that 75mm exhaust wheel and smaller T4 flange was going to hold things back.
So rather than tear that car down and ruin a good combination, I sold it and bought my current car already built around an S484.
