Well.......i just made the plunge 2 weeks ago myself and bought a '90 Notchback. i will be putting in my Fast Times built 427 sbc Dart block and Dart 18* head setup and do the whole twin turbo setup on it with a TH400 or TH210 trans. i'm doing this instead of building the '00 Camaro SS Vert i got rid of because i owed another $16K on it. i bought the Notch for $1500 minus a motor, trans, and hood, basically all the Camaro would have been once i replaced everything and it would have basically been a roller for that $16K!!! that's where it became clear to me that the Notch would be much cheaper to build. the Mustang is also a 67K mile Florida car too. 
now, no more $508/mo payment or $75/mo insurance. 
i'm doing everything light. i've just started on it, but i've got a c/m cage being built along with Kirkey seats, tubular/coilover front end with a F/R manual rack and Strange drag brakes all the way around and a pin on hood. i'm keeping it a full interior car, but i'm doing a ladderbar/coilover rear setup with some HUGE tires in the rear, (14.5" tread). pics are on my homepage for those interested.
