If it's whining because wear on the ring and pinion, it'll be better with your new gears. But the carriers themselves can be pretty noisy on these cars without it being a problem. You can check your oil by removing the fill plug. If some starts to drain out, then it's full.

I've always used Royal Purple 75w90. You need 4 quarts (it uses just shy of 4qts). You shouldn't have to be paying anyone for labor, it's very simple actually. Make sure you buy a new gasket and some gasket sealer. You'll also need a razer blade scraper. Make sure you scrape ALL, I mean ALL the gasket material off the diff cover and rear-end, or else you'll be doing it twice. Ask me how I know.

WOW 4 quarts, what are you filling a 1 ton truck rear?? the 7.625" rear holds 1.75 quarts.

Jack the car up, support it. Remove all the diff. cover bolts, after placing a drain pan under it. You may have to pry just a little to get the cover off. after fluid drains, i use brake cleaner to spray off the gears and then a towel to wipe out the bottom of the case. Scrape old gasket off, if it tears when removing cover. if it doesn't you can get by with just putting a little gasket sealer on it. After doing one of those two, reinstall cover. remove fill plug on the side of the housing..(front side close to driveshaft, should be a 3/8 drive extension to take it out) add limited slip additive first, then fill with gear oil until it starts to run out of the hole. Reinstall fill plug, take of off the jack and enjoy!!!!

I'd get one just in case.
Also before you do check to see if the noise is coming from any particular side. If it seems louder from one side than the other, you might have a bearing problem like someone above said. While you have the cover off I'd check the bearings if this is the case. It's actually rather simple as well if you have pretty basic tools. I'd recommend picking up a Haynes or Chilton book if this is the case. (Or get one anyway. They're good to have around.)
This might result in bearing replacement, or if you're unlucky, axle replacement. I'm not saying to do this check right away. Check to see if the noise is side-specific first.
