So I thought I would have been safe having a "shop" install my rearend before it was shipped to Hawaii; I may have been wrong.
1. The entire rear sits off center of the car (towards the driver side).
2. It is spraying fluid all over my undercarriage. (and it is NOT overfilled).
So hopefully some of you more tech-knowledgable people can give me an opinion to what you believe is the issue(s). Do I just need to adjust the panhard bar or ?

I ditched mine after my 1600+ mile drive home from Memphis to Maine when I bought my car. The entire trip home I kept adding fluid to the rear in fear it was going to blow up. Of course when I got home, there was plenty of fluid left in the rear, and the entire tail of the car was covered in ger oil.

That's damne near my issue is the entire rear undercarriage gets covered in the gear oil. And I haven't done anything to the reareend except change and add fluid. What should I be using instead fo the original vent???
AND, is it a difficult task to perform a panhard adjustment? (I can get use of a lift bay for $2/hr with tools)

I posted this a few days ago in another topic regarding a similar problem with a Moser 12-bolt. This is a little more in detail.
-Go to an auto parts store and get a brass hose barb for 3/8" hose. I don't remember you need a 1/8" or 1/4" pipe thread fitting, so pull the original breather out first and bring it with you. Also get couple feet of the 3/8" rubber hose to push on to the hose barb, a couple of small hose clamps, and a small K&N type filter to match. (I used the K&N 62-1000 filter, but a 62-1090 would work nicely as well)
-Screw the hose barb in the vent hole with some teflon tape. Push the rubber hose on the barb and clamp it. Figure out where you want to mount the filter. With the rear end hanging, cut the rubber hose to length so it will not be stretched when you jack the car up again. Push the filter on the other end of the hose, clamp it, and mount Mount it up to the body above the rear end housing.
To mount mine, I made a 1"x3" aluminum tab and mounted it with one self tapping screw to the support next to the rear firewall. I drilled a 3/8" hole on the opposite end of the tab and dropped the filter down through the hole. Slid the clamp over the hose, pushed the hose on the filter, and tightened it up. As good as done.
This should hopefully take care of your problem, unless it really is a pinion seal issue.
Fwiw, I run three quarts in my Strange 12 bolt and have not had a problem with the gear oil misting since I did this.
