It's nothing more than opinion which is preferable. Claiming one way is the best/easiest is nothing more than giving your opinion, because that's all your claim is good for. I guarantee I can get one out of the top with a cherry picker just as fast as you could get one out of the bottom with just a cherry picker.

Just from my experience, seems like if you can do it, removing it from the bottom would be easiest. Those two miles of dash over the engine made it a pain (harder than changing a small block into a monte carlo)

I just did 2 F-body's out the top by myself.....was extremely easy, but I know my way around these cars.

This is probably a stupid question but this all involves separating the motor from the transmission right? Or not? I have mine torn down to the bare block. But am planning on installing my new motor back in with heads on etc.

I read that one issue with pulling for the bottom is that you need to disconnect the brakes and PW and many hate that since you need to bleed them. I read that the PW is a real bitch to bleed.

I'm assuming you mean power steering? If so the power steering is the simplest thing to bleed on the car. Fill the resivior and turn it lock to lock holding it there for a few seconds each time and keep refilling untill the resivior doesn't have any air bubbles in it.
