Should I or not? lol. Granted I have 4.10s, I would do 2nd gear burnouts regularly fine but never done it with starting from a dead stop with the line lock, to afraid if the rear will die on it or not. Just with street tires on the street, you guys think this is to much of a load or should be fine?

Absolutely. That is the only way to get any wheel speed, especially with 4.10's. I always do my burnouts in 2nd, and that is on stock 3.46's. Your LS7 clutch might not like it, but that will just give you the opportunity to buy a real clutch
Once you get the tires spinning, there isn't a huge load on the rearend. Once you start hooking up, you start breaking ****.
