Hey Jackson

Personally I would pull the motor will only add a litttle time to the build but in return the ease of installation will be greatly enhanced.

And if your doing the rod bolts it will be necessary to drop the oil pan so the K member will need to be dropped anyway.

Working anywhere near the rear of the engine is a PITA I can only imagine trying to get the heads out...

+1 for dropping the engine out

oh yeah..the new gm high tech did a heads/cam swap with pics..might help ya out

i replaced head gaskets on my 98 with the engine in the car. took me about 2 hours to get the heads off. hands down the hardest thing to do was gets the head bolts torqued using the angle meter. especially on the passenger side near the a/c box. a close second was getting the AIR tube and wiring harness routed correctly behind the engine. put the ground wires on the back of the drivers side head on before you bolt the head down otherwise you have no room between the head and firewall to bolt them on. overall i had about 5-6 hours invested but im a gm tech and i moonlight outta my garage so i have every tool imaginable to do the job. next time i will take the engine out but it wont be too bad since i have a hoist.

I've done both ways many times. It's easier to just drop everything out the bottom. Even for just heads/cam I'd drop the engine/tranny. You take the wiring harness out with the engine/tranny, so you don't have to completely unplug everything.
