Help solving the long term issue.
If so, I don't think it's that uncommon...I asked a similar question about a week ago (first summer in AZ) and it didn't sound like I was the only one. A lot of the stock thermostats that read 210 consistently aren't necessarily accurate from what I've heard as well. Apparently after '99, Chevy essentially used "dummy" thermostats that did not fluctuate from ~190-230.
