My guess is that there is some kind of leak somewhere. Or perhaps low. I have seen that happen on residential systems before. Usually on homes, its cause the condenser is clogged up with dust and debri. ??

Never seen it that bad on a car before, but I do home AC and it's most likely low on refrigerant. Don't think you can disable it with a fuse because other things might be on the same circuit, see what the owners manual says. You could also keep the compressor from coming on by removing the belt or unplugging the electrical connector. I'd bring it somewhere instead of trying to do it yourself, if it's low there's a leak somewhere - you can buy a recharge kit and try that, but if it's leaking it'll only happen again.

You say you're not using it, was the a/c or defrost on before this?
If it was on it may be low on refrigerant, the inside fan might not be running, the evaporator coil (under the dash) might be dirty or clogged, or it might just be too cold out, it's normal if you run the defrost with the heat turned up a little and it's cold out.
If it was switched off it could be the compressor clutch stuck on, or the relay stuck.

I don't think low refrigerant will not cause the system to freeze up, however an over charged system will.
You're not the only one with this problem
I had a similar problem with my car last summer. Here's the thread I made.

If it cools fine on high a/c the refrigerant level is fine. On f bodies the a/c compressor is a variable displacement design and runs continuously on a demand for defrost or a/c. When the control is in the defrost position and the compressor is running if the control is set more towards heat then cool there is decreased flow across the a/c evaporator leading to a freeze up condition. As this is happening a set of valve plates in the compressor opens up to protect the compressor from slugging liquid refrigerant and damaging the valves. The line freezing up at this point is normal and then when the a/c evaporator pressure sensor determines the suction pressure is too low it will disable the compressor and allow the evaporator to defrost.

I think the condensor is plugged. Maybe...my fridge line did that a few years ago, and the condensor was replaced..I am looking at that fridge now..no problem.

If you unplug the pressure switch on the line it will keep the compressor from coming on when you run the defrost/heater. At least untill you get it fixed.
Just curious, whats that loose connector with the blue weatherpack hanging next to the cylinder head?
