Default stupid question about the 160* T-Stat

I have recently put in a 160* TSTAT on the Z. My stupid question is this:
"IF I have a lower tstat, shouldn't my temperature gauge on the dash be showing me around 160 deg temp? It is still consistently around 198. anybody have any ideas? do you physically have to have the PCM told it has a 160? I thought that the 160 tstat would open at 160 therefore my gauges should read around 160....

confusing myself

The t-stats rating is when it opens - once it is open the coolant flows steady through it. The engine will only run as cool as the cooling sytem will allow. Adjusting the fan on temps will help keep it cooler or a more efficient radiator etc.

Yes like XLR8VRL said. Lower your fan settings. Also temp gauge in your 2001 is more like an idiot light. Will almost always read around 210.

A 160 Thermo won't do anything for temps, just to let you know. The coolant just enters the engine sooner...

Really..
HHHHMMMM........Going by your theory I should see the same temps as say a 250 degree stat, after all it is just opening up a little later.

I think you need to rethink your post, or edit out the wont do anything for temps part. Driving a car down the road forces air through the radiator right? This air intern cools the coolant in the radiator down, which cools overall engine temps down right? So with a moving car and 160* thermostat you could in theory have a car running around 160* with a minimum of 160*. How is a car with a 180* thermostat going to run under the same conditions. My guess would be a little hotter, say at least minimum 180*
