some kind of scan tool that can read engine parameters. on the highway at cruising speed, see where the engine coolant temperature sits. or pull over and scan the thermostat housing witha non contact thermometer.

Im right here in houston with you. I run a 180 and its the biggest mistake ever. Car runs 200 degrees constantly even at night, but durring the day the fans stay on. Get a 160.

The "180" is a freakin' hoax, your stock one is like
"184" rated. The "160" pivots about 175-177F. The
stocker pivots about 194F. The fans are your problem,
not the thermostat. Get those programmed and you
will be a lot happier.

Stock fan1 on temp is 226F. That means you can expect
30F worth of "mood swings" just as you drive around.
Go try tuning fuel and spark against that... ptui.

Get the 160 and be done with it. I put a 180 in to begin with didnt notice a difference even with the fans coming on earlier. So I bought a 160 and there is alot of difference.

Yep, 160* with the fans on earlier. I am using the following fan settings:

Fan 1 on/off 184/175
Fan 2 on/off 194/185

195* is the "sweet spot" on a stock tune says one of the retired GM engineers on another forum who was one of the leaders in the design of the C5.
