Sounds like an exhaust leak. Could be leaking where your y hooks up. I've confused a leak there for valvetrain noise right after I did my trunions. Right after you work on something it seems like noises are more noticeable. Make sure the plugs and wires are all tight.

Sounds like mine, which I'm 99% sure its a exhaust leak from the ORY...Since I dropped the car and scrape everywhere.

Op: Let the car run for a few min. Look under the car for water by all the exhaust clamps. My car sounded like yours. I found a clamp leaking from the header to the ory. It was dripping on the floor in my garage. Hope this helps!
Also make sure you torqued the header bolts to spec. Think it's 18 lb/ft.

Did you torque them to exactly 18 lb/ft and in the correct sequence, or just wrench 'em by feel?

Have you re-checked the torque yet?

Which "regular" gaskets did you use, GM multi-layer steel ones or aftermarket fiber ones?

maybe check the swipe pattern on the valve stem for proper push rod length.how many miles on the rocker arms ?maybe you need a trunnion bearing upgrade .I hear stock GM exhaust gaskets seal the best.

What! For something that sounds so much like an exhaust leak.
