I saw the same thing in a friends car and it was from low oil. Try putting in half a liter extra and see how that does.

Correct, but only if it's oil and not 50PSI of foam.

The oil pump is a very simple device, and it does not "know" anything. At X rpm, it pushes X cc's of oil. When the pressure gets to a point, a relief valve bleeds off extra pressure, but it doesn't "drop" the pressure.

When air gets into the pickup, it compresses easier than the oil does, and the pressure will drop sharply. Yes, you may still be getting oil, but not the required volume. 50PSI of foam does not protect the engine like 50PSI of oil does.

PS - Chevy even recommends "over-filling" the Z06 if used for racing. I never let the level get down to the high mark of the stick, and run 1 extra qt at changes.

Overfill 1 quart and see if the symptoms go away. If not, check the guage, if it's not the guage, you better find out what it is.

On old SBC's, a high pressure oilpump would fill the valve covers at high RPM, causing oil starvation, but I don't think that applies (that I've heard of), so I would suspect the oil pump.
