UPDATE: I removed the flexplate as I was not comfortable with using the shim and planning to spin the motor pretty hard. The shim was just a band aid. Once removed it was apparent that the ring gear wasn't true where it attaches to the plate. On the engine side, where the plate sits into the gear and is welded, there was areas that a .006 feeler gauge would slide around freely and others a .0015 wouldn't fit at all. The odd thing to me was the fact that it was not consistent( .006 on one side and then none at 180*).
I called the manufacturer and have another one on the way. I was concerned about being able to return it as I had bought the plate almost a year ago but they were very accommodating.
BTW, the motor runs and sounds fantastic. Decided to address this before using it though.
