Default Engine losing it's prime (oil)

So it hasn't caused any issue but I've never had an engine do this before.
It's an ly6 converted to 24t reluctor and swapped into a 2000 turbo camaro. It runs great but has had this issue since I've owned it. So on to the issue. Every time I start the car it takes about 1-1.5 seconds for it to get to full oil pressure and in that time it sounds like a damn sewing machine. Oil pressure at idle is 50-55 idle and 80+ at wot. It's a shimmed vvt pump, oil is rotella t 10-40. Is this a pump issue? Oil issue? Pick up oring? Nothing to be worried about?

I can't see it being any of the issues you mention. Pump, oil and pick-up o ring would affect running pressure and you're good there. How about the oil filter by-pass valve stuck open allowing the oil to drain back out of the oil passages when sitting?

Since the pump is mounted out of the oil with a long pickup tube this can be somewhat normal. Using lighter oil may help it prime faster. There is also a check valve to prevent the upper portion of the oiling system from draining back into the pan. If it sounds like a Sewing machine every time, then it may be another issue. Does this happen after 30 seconds of sitting or a few hours?

The "Check Valve" should prevent drain back possibly overnight, it may be the valve stuck causing all the oil to drain back in the pan which is why you hear the lifters chattering when they are pumping up at start up.

Where is this check valve? Would it not be the oil filter by-pass valve? I can't think of any other.

I am thinking of the one inside the oil filter. I wonder if a worn/damaged "Barbell" can cause drainback as well?
The oil filter should have an Anti-Drain back valve in it.

You may be on to something here. I had 2 fbody pans, but in the filter pad area one just had a hole while the other looked to have something (check valve I assume) I used the one that just had a hole because it was cleaner. I'll take the filter off tomorrow and take a picture of what it has or doesn't have.

The car will be getting a cam swap soon with new lifters, springs and trays. I already have everything, but I will likely replace the pickup tube oring just because I'm already there.

If it is missing you should be able to get one from GM. Use a socket or something the right size to tap it into place.

Could be the oring, a small air leak at the oring won't effect oil pressure but it will cause the trouble you describe.
