Water cooled 991's have ridiculous air pocket problems, the final solution was a
couple companies that sell vacuum bleed systems, you pull a vacuum on the cooling system,
then it has a valve you open to suck the coolant in.
Here's a couple, I've only used the Baum version myself.. The principle is simple..

when it gets hot it does smell like exhaus . The exhaust is out the bumper so ur literally right by it
I do have regular water in it.
I also opened up front bumper to get air flowing vs just the 2" holes

I run the same adapter, no issues.
What I meant was does the water smell like exhaust gas, to see if maybe there is a head gasket issue.
Nothing in your setup is any different that lots of other setups that run perfectly normal temps. Tons of turbos are placed right where yours is. I could see your fan possibly melting a little under a long pull but maybe not lol.

Whst head gasket you recomend. I did run the btr22033. Boosted application
If I gotta remove the heads to check gaskets. I dont wanna do it again. If and one runs the btr 22033. Check the tang on them. Both sides should be between 2nd and 3rd head bolts
