No more than .007". That's of course if you're referring to a stock 5.7L aluminum block LS1 and not a 6.0L LS1/LQ9 LS1.

Precaution: DON'T FORGET THE TORQUE PLATE

Early ls1 blocks (<2000) can only be honed .004, later ls1 blocks can be bored .010" (as per the factory)

I went .007 on my 97 Vette block (3.905) as I spoke with several other members on here that have done the same without any problems. THe only thing that everyone agreed was to not use a power adder (N20, turbo, supercharger) on an early block that had been honed that much.

They can be bored. You can take up to .007" out without problems. Honing only takes out, as you stated, a thousandth or two and is just used for cleaning, truing up the cylinder walls and giving a cross hatch for the new rings to seal to. If you go with any aftermarket piston (Or at least 98% of them made for the LS1) you have to bore the cylinder to 3.905" and honing would not realistically be a very good method for removing this much material.

If you have any major damage, you either resleeve or throw away and start again.
