Default 4.8 turbo or 5.3 turbo?

I would like a reliable 800 whp. And what kind of bottom end parts do I use etc. I want to beat on it but be able to daily.

Effin yuge injectors
Nasty trans
Big turbo
Don't do anything to the motor, you'll let the magic out.

The 4.8 will be the stronger of the two...with all else being equal...due to the shorter (stronger) arm or stroke. The Oem rotating assemblies are plenty strong enough for 800 whp and a good beating. Lots of guys here do this daily.

so only do heads don’t even touch bottom end?

Try to find a newer 4.8 like a work truck model. Ly2 with no dod or afm. And it will have good rods and 799 heads.

May be easier to achieve (less stress) with an LY6. Larger bore and valves, same durable iron block and external size. That's how I'd do it, anyway, but I'm just a tool. If I were to do a turbo motor, it would be an LY6 build, sans VVT.

07 to 09.5 ly2 is the best stock long block for boost in my humble opinion. No vvt, no dod, no afm. Upgrade the valve train (cam/springs/pushrods/3 bolt cam sprocket/trunnion up grade) and run that thing. Make Shure you have a tuner that is top notch. Oh and a really good fuel system. Good luck no matter what path you choose 😈
