Mods are in my sig, more or less full bolt on except gears.
I'm assuming my next step would be a cam - but that's damn near $1200 in parts just to gain 40-50rwhp. If I pick up a used NO2 kit I can spray a 100 shot all day long for 300 bucks. What does it really cost to fill that bottle up all the time?
What do you guys would be a better option for me? (daily driver by the way)

$25-35 depending on local cost. n2o will definately be easier on the wallet and effect daily drivability, gas mileage, etc. less but **** can happen when you spray so who knows
either route you go make sure you get a good tune.
my cam swap wasn't that much btw but I'm a cheap ***
-used cc503 $130 shipped
-new comp hardened pushrods $25
-new crane 10308-1 springs $180
-new comp magnum rockers $180
-new timing chain $20
then of course you have gaskets and fluids + tune but you'll want to get a tune if you spray it also

You don't "need" to do anything for N2O, it just depends on how often, how hard, how big, and how smart you want to be about the setup.
Contact a vendor and do some reading, there's a right way to do it and a wrong way to do it...and I can tell you that the right way costs more than $300.

you'll want to tune it for n2o just to be safe, never know if you're really getting enough fuel, safe timing, etc
but then again I sprayed a 180 dry shot untuned for like 2 years so who am I to say anything lol
best and safest gains will be had with a tune when using nitrous.

I don't have an EWP. I'll just hang on to my stocker until it goes.. then upgrade.

Also, lets say I didn't install new headers and just welded in a cutout (I have one large 3in going back), would I see any gains from that? (before or after cat?)

The headers are the restriction at this point, the loudmouth is pretty free flowing, that's why its so loud.
You would see a lot more gain going to longtubes.
Gears
LT's
Cutout
That is the order of effectiveness, gears will make the most difference, then LT's, then Cutout
