You pulled the water pump to check the impeller? You confirmed the thermostat is opening at it's set temp?

What radiator cap do you have? The flow to and from the expansion tank is a function of the radiator cap. It's supposed to be a 18PSI cap.

The radiator is supposed to be full at all times. Expansion/drawback is to the expansion tank while keeping the radiator full and air out of the system.

The cap was a 7psi cap that the car had when I bought it. It is now a 18psi cap. I did not pull the water pump to check that... forgot about that one. I suppose I would just replace it if I was going to go through the trouble of checking it. Thermostat is fine, but I would like to put a 160 in it... I guess I would just like to figure out the problem before I go and modify anything.

If the system is bled properly, you either have a flow restriction in the cooling system or need a new water pump.

I believe I know what this is..

What temp ar eyour fans set to turn on? If your engine temp is hitting that fan setting temp while on the freeway they might be turning on. AIr at freeway speed + air from fan = BAD. Very turbulent as the air is pushing really fast at speed and getting slowed by the fan which cant move nearly as much air.

Unplug your fans and hit the highway to see if the temps drop and stay low. If you are still hitting higher temps at speed then it is something else. Possibly timing or afr at that cruising speed causing it to run very hot.

Go for a boot with the fans off on the freeway and report back.

I re-read the post and didnt notice the temps so close in your original pic ! I would also agree that is hardly a concern. I don't know where the temp sensor is locatedon the f bodies but it could have to do with the location or the gage being slightly innacurate.

If you are hitting really hot temps in 6th it could possibly be a water pump or a restriction somewhere in the cooling system. The flow is really slow in 6th as the rpms are low and there is a load on the engine. It's easier for the car to pull 5th and the higher rpms = higher flow from the pump so it only makes sense to run cooler. Do you have a tune?

It does have a PCMforless tune (tuned for 160º) I think I said that before. On Monday it was getting hotter than the hottest temp in the first post.
It was just a bit closer to the line than in this picture.

Your oil pressure is a bigger concern to me does it even move ?

If your factory gauge reads the same as mine that's really around 250.

theres a reason why you can't find the probelm, because there isn't one. Those are normal operating temps

I have to chime in I have the same issues 30k on new water pump tho for me... and I heat up the same way in 6th it climbs to the last hash mark...(not to red)... I've had it flushed but radiator cap and thermostat are stock and 14yrs old Imma replace those and see... I have my air dam on and radiator isn't clogged.
