I just finished my 3" true duals over the axle with twin 3" Dynomax bullets in the stock location & it's awesome!!! I thought I was gonna miss the Spintech's but I don't. It was the biggest pain in the neck to do & by the time I bought all the stuff I needed to do it it broke my bank but I love it. Here's basically what I did except I used 3" pipe & bullets. Ok so first off just slapping on a set of Long tube headers and taking out the cat isn't going to give you a choppy old school muscle car sound. You need to get a cam with an LSA around 112 and a built valve train.
I would recommend Kooks Long tubes with a true dual set-up dumped before the rear axle if you want that old school muscle drone.
The choppy idle is all based off the cam really, and all those videos were of cammed cars. You might want to do some research here. There are lots of threads about this stuff and it's all helpful to do some reading about it all.

I have catless 3" duals with powersticks and IMO it sounds about as much like an older muscle car as you're ever going to get. I think the "crackle" you are thinking of has more to do with being cammed though. And I third that the 97 bird with the CC503 is running HORRENDOUS. Believe me, you don't want your car to sound like that.
