Anyone know of a good LT1 motor mount install guide? If not have any advice? Do I have to pull the exhaust manifolds off? How do I support the motor, from an overhead hoist? Thanks for the help.

Overhead hoist would be best, just take the weight off of them. Getting those in and out is going to suck, but take your time and work around the obstructions....
I have done them in the car with mids/LTs and all sorts of BS in the way, just takes time...

It's not that bad... Yes, removing the "Y" pipe will give you some extra work room, if not actually required. (I took mine off)
First get the car SECURELY up on stands or ramps. As far up as you can safely go is beneficial. I supported my engine by CAREFULLY bringing up my floor jack, with a short piece of 2x4 wood on the pad, against the front pulley. Loosen the "through bolt" of the mounts, then the 3 bolts that attach the mounts to the frame.
CAREFULLY raise the engine a little, and remove the mounts. I'd do one at a time, just to retain alignment and stability. Replace the rubber cushion, following the instructions that come with the poly cushions you bought (Energy Suspension, Prothane). Complete one mount and install it loosely. Do the other side, re-install loosely. Set engine back down and tighten all bolts. Re-install exhaust. CAREFULLY lower car to ground, and have celebratory beer.

I did the same thing, but used a bottle jack and wood on the pully to support the motor. Unbolted the y-pipe and dropped the starter to help out with room on the pass side. Just take your time and be careful, one suggestion, is greese the bolts that go into the mount for the motor and put one side in first (driverside) and pivot the motor down as getting the other one in is going to be a biotch. FYI - Changed my oilpan gasket while I was in there too.
