IMO if you pay the labor; replace everything while they are there.
New Era Performance, which is a sponsor, charges $500 for labor to do the hydraulics and clutch install. The monster also comes with a new flywheel. I would see what clutch you are getting.
I am actually going to do mine myself for $1100 with the above mentioned parts. Never done one before, but with all the support on the board, should be a piece of cake.

pro have to agree with u on doin it yourslef and stuff alot cheaper and plus there is alot of suport on here to get it all done rite yourself
If you have the tools, you can probably get a way better clutch and install it your self for $1900. Did they tell you what clutch they want to install?
Here is the breakdown to give you an idea for stock power level:
Monster clutch for stock power $670, includes new flywheel and slave cylinder. This is for up to 425hp
Adjustable Master cyclinder- (tick) $340 or you can get a GM one for under $200 that is not adjustable, but adjustable is recommended.
Speed Bleeder $50
New bolts - $20
So about $1100 if you do it yourself. Some people wouldnt take this task on though. If you have the tools, its not that hard.

$500 to do a master and clutch seems a little steep. Most do a clutch swap for around $300 from what i have seen, around $200 for a master swap is kinda high; only takes around an hour. Prices are different all around. But i would never pay $1900 for a clutch and install; it's not a hard swap.
If you have any mechanial ability, I would just do it yourself. Tons of support here. I just did my intake manifold, someone made a video and I just brought my laptop out in the garage and watched the video as I did it.

thats highway robbery for a clutch swap . most i would do is 600 on labor and they better use 24karat gold tools.
i plan on pickin up a level 3 monster around christmas!. im sure they will have some sweet deals around that time

fyi if you have even basic tools at the house you can go to an auto parts store and get a replacement master for $70 and do it yourself in about 2 hours.

PS most shops charge 95 an hour. So they will charge you 2 hours for the master and atleast 4 four the clutch. My tranny mechanic in town can change a clutch out in 2 hours but like i said most shops will charge 4-6 hours.
what i think i'm reading though is that parts for a generic m/c, slave and clutch kit shouldn't be in total more than ~$800? i guess anything more than that would be labor, but there's no way it should be $1100 worth. gotta call the shop again tomorrow and find out what the deal is.

ALLDATA time guide says 1.3 hours for the Master and 5.4 for the clutch. Most shops are going to use labor time guides like this.
But realisticly it isn't going to take that long. Warrenty would hav paid 1.0 hour for the master and 2.9 hours for the clutch.
If the shop is quoting you 5 hours of labor I would think that is fair. My question is why are they saying you need all of it and why were you having them install a Master in the first place?
