6.0 stuttering
I'm not sure if this is the right thread for this question but I need help. I have a 2000 chevy 2500 2wd and lately it's been a dog. Sometimes it will run just fine, other times when I hit the gas it stutters and doesn't want to move along with idling way down (It does the same when switched to neutral) eventually after holding down the gas pedal for long enough it will get its head out of its *** and want to move. What can I do?

Smoke test or WD40 test to look for vacuum leaks would be a good starting point. Worth checking plugs and wires, even though you're not getting misfire codes.

I replaced the plugs with delcos about a year ago but idk how old the wires are. I was told that a dirty throttle body can cause that. If I decide to clean it should I pull it off or just hit it with some carb cleaner and a brass brush?

I'd pull it so that crud doesn't go into my intake

What you're describing is classic vacuum leak behavior, though. Very difficult to run on little to no throttle (due to unmetered air, and therefore, underfueling) and it runs good at high RPM, due to unmetered air being a trace amount compared to the open throttle body.
