thinking about removing power steering...
if anyone with personal experience could put in some input that would be great...this will be for a 85% street driven car and 15% track car.
how is it driving on the street?
do you regret going to manual steering?
are there direct bolt in manual R&Ps?
how many turns from lock to lock?
any adhered problems from switching to manual?

with those big wheels on your car, it will probably suck. Friends mustang had no power steering and big tires, what a workout that was... if Its a more street than drag car personally, I'd keep the powersteering.

I'd stick with the power rack with a 85% street car.
I have a manual rack in my car right now but it has yet to see the street. The vendors say there is a decreased turning radius and if the car is stopped it's very difficult to turn the wheel. With a full size wheel this will be even worse.
Little word of advice, if you are going to go with a manual rack call madman and get his tie rod adapter pieces. They are a much better option then what they give you to install.

Can I ask a stupid question? And not to hijack the thread from the OP, but...
What's the point of deleting the power steering? I'd figure you'd want to keep it on anything still being driven on the street. I would hate to drive a car that was a bitch to turn and maneuver.

If anyone is interested in our manual rack set-up, here is some information on it:
Our rack is a direct bolt-up application. There is one tab to weld on, and the tie-rod mounts on the spindle have to be drilled out to 5/8" for our bump-steer kit. They work for OEM rack and pinion mounts on factory or aftermarket k-members. Weight of the rack with the bumpsteer kit is 15.2#. Our kit has steering shaft applications for LT1 and LS1 cars. If anyone has any further questions, or would like to order, please call me at 225-673-3533

I would not do it on a street driven car. Don't take this the wrong way, but if you're running mid 13s, you're a long way off from the "every bit counts" weight reduction stage.
Manual racks, tubular K-members, tubular A-arms, etc. are for drag cars IMHO.

I'm considering manual as well. My goals is 9.999sec in a 20+mpg car. Would it be money well spent to get to my goals? Could this mod be my "best" excuse to keep my girl friend and her daughter from driving the car? In comparison to steering when the power steering fails, is it easier to steer when stoped?

Little word of advice to you and any one who goes to a manual rack.
I would not drill the spindles for a bump steer kit. I believe MADMAN has a setup that allows you to not to have to do that. I strongly advise not doing drilling them out.
