America's on Post Oak has consistanly delivered the best steak I have ever eaten, The Charrasco. This is not your steak and potato kind of a place though. It is a little nicer, not too expensive, and has a great atmosphere.
Best bang for the buck steak I have ever had is from Texas Road House, The Dallas Filet.

Good place if you are in El Paso, is in Fabein, TX. I think its called Cattlemans, its in a ranch somewhere there.
Also, The Keg, but I dont think there is in Houston. Of the bigger chains, definately Outback does it for me. Especially when its on the company's dime.

I have long been a steakhouse snob, and eat out at a steakhouse 5 - 10 times a month ..
In the Houston area, there are several very good choices. here is how I rank them:
My place of choice is The Strip House. The service is always perfect.
The Strip House - best steak in town. Cheescake is a must for dessert.
Flemings. one of my favorite places. great steak. Best crabcakes in town.
Ruth's Chris - The most consistent chain in the country. Never a bad cut of meat, never bad service. Never the best in town, but can always be counted on. Houston location is one of the better ones.
Papa Brother's - Best appetizers in town since Strip House dropped the Tempura Shrimp. Good cut of meat. Service can be lacking.
Sullivan's - Great food, great atmosphere. Would eat there more if it was a little more convienent.
Smith&Wollensky's - very over rated in my opinion. service was awful, half the menu items were unavailable, and the wine list was so barren that the first 9 bottles we selected were not in stock.. Too many good options in this town to give them another shot.
Morton's - The polar opposite of Ruth's Chris. Morton's has to be the most over rated chain on the continent. Last time I ate there, I had aparty of seven, and all seven steaks were cooked incorrectly, which seems to be a Morton's policy.
Vic and Anthony's - Great overall dining experience, probably the best overall steakhouse in town from appetizer to desert (although not the best of any of them), but they really pissed me off last time I was there. they were extremely rude to me and my party, and ran us off from our table without allowing us to finish our desert. (said they had the table booked and we were late arriving for our reservations, which we were, by less than 10 minutes) That was the last time they got any of my business, and I refuse to recommend them. I won't do business with anyone that treats me like I am doing them a favor.
Fogo is a fun place to eat, but it isn't a steakhouse.. and I also wouldn't recommend it as a date place unless you have been together for awhile.

Old San Fransisco was one of my fav. places for steak, but since its gone I don't really have a fav. place to get steak at.
Though next time I'm in Austin I'm going to theirs as long as it's still open.
