I was considering doing 275/40s on all 4 but got to looking around and thought the 285s would fit.
I have also thought about doing 275s up front and 285s in the rear.
What would you recommend?

Honestly, I would go with a 275 40 R17 up front, and a 285 40 R17 for the rear (if you are talking Nitto NT-555). Not sure what the extreme is. 315 35 R17 would be ideal for the rear, but those wheels will not handle that width safely.

You can fit a 315 in the front so do what you want to do. But we cautious while driving, a wider tire will make your car track. which basically means it will follow little divots in the road, if your not paying attention it could put you in another lane or off the road!
