26x11.5x16 et street on 16x8 rim? will it work?

It will fit, though not recommended....this is sort of like the question asked "315's on a 9.5 rim. Yea it will work, though not made for the application.
Stay with a smaller 10.5 tire...it will fit better

If your going to that extent of picking up a new aftermarket rim, get a 15 inch rim and reap additional benifits from the additional sidewall area.
Choosing a slick does help traction over a road tire, though your still consuming quite a bit of rotational energy due to having to spin an overly heavy rim. Not only is it heavier, the weight distribution is even worse. The closer the mass towards the center of rotation the less energy it takes to spin the wheel. (another big benifit of drag tires over heavy road tires).
You'd want a 10 inch rim and have ~7.5" of backspace on it. Centerlines 10's at 6.5" makes the rim stick out ~1 inch further and looks odd IMHO. It also tends to get dangerously close to the fender lips wheras rolling the fender lips is a good idea. If you choose an 8 inch rim, then you are back to square one. You should only run a 10.5 tire on an 8.
There are no shortcuts if you want to do it right:-).

Prostar won't stick out in the rear though the front runner sticks out a bit. You will have to do some modifications to make it fit though and add wheel spacers. You will also need longer studs...
THis stuff needs to be a sticky as it's asked all the time:-)
Bogarts are the best best though if you want the best fitting rim set with the correct backspace no grinding or spacers needed, not to mention highest quality (had to throw that one in).

I found some wheels that might work. Could someone take a look at them for me? Centerline wheels santa cruz series. They are 16x9.5 with a 7 in. backspacing. Would those work with my 26x11.5x16 et streets?

We can make you a 16x10 rim though I highly recommend NOT using one as you can use a 15x10 without problems.
There is no advantages for using a 16 inch rim from a drag racing perspective over a 15 inch rim... only disadvantages will be seen...more weight, more cost, less traction.
Only time to use a 16 is when you can't use a 15.
No reason to try to reinvent the wheel:-)

yup, you need a 16 inch rim then...I'd just sell the tires or return them if you haven't used them...tires are a lot less expensive to replace vs rims...

If you buy a cheap rim, it will most likely be a heavy or poor quality. If this doesn't matter to you, then pick one up or just stuff what you have on the rim you have right now... It's your choice. do what makes you happy.
