What are generally the three most important aftermarket guages to have?
I've been thinking about getting Autometer guages installed and have decided that I need the trans temperature guage to read my A4 temperature, the air/fuel guage to see how the car's air/fuel ratio is on the drag strip, and the water temperature guage just to get a much more accurate temperature reading of the car (compared to just using the inaccurate '99-up factory temperature guage). What do you think are the three most important aftermarket guages? Thanks in advance for the info.

I think it depends on the route you go. If you go force induction, you need a boost gauge, probably fuel pressure and a/f at least. If you go spray, you'll want bottle pressure, fuel pressure and again A/F.
But being it sounds like you're keeping it n/a, the gauges you have listed are pretty good. Trans temp is a great one at least. I think you can make an arguement for all the gauges you have listed being important but for your setup the route you're going should be a good one.

im goin with an A/FR(connected to wideband) gauge in one of the A/C vents, and trans temp, water temp, rear diff temp, and fuel pressure in a panel for where the radio goes(with quick connect harnesses, more on that when i get on it). id say a AFR gauge isn't really any benifit without a wideband hooked up to it. the stock O2s are just not good enough to monitor in real time

What about a bolt on car? I want some gauges but cant figure out which 2 would actually be the most useful for me? I need trans temp with my stall, but what other 2 would BEST suit me?
