"How hard" is relative. I dont think it is, but I have a degree in electronics.
Its more time consuming than anything. If you prepare yourself with the proper tools and documentation it can be done with patience.
I will say that you be in a much better position to troubleshoot down the road if you do it yourself. You will learn a ton more than just snapping in a new harness.

i love hacking up harness and would like to know some of the same info. i can pull wiring diagrams and so forth here at work. i guess a question that i would have is do you just cut/remove circuits that are not needed? is there a list of the circuits that you remove?

k pulled the 05 k2500 pcm diagram. im going to guess these are the ones to cut/remove from the harness

I wouldn't say it's that hard, as long as you have the correct PCM Pinout Diagram, you can run the Wires to where they need to go.
Me personally if I was puttin in a new Engine, I would strip the Harness down, and then plug the Connectors into the proper places on the Sensors that I was running, then group the Wires for everything and run them clean, then tape it up.
