Hmmm, hard to say since they didn't take it much past 6400 or so but it doesn't really look like the power is nose diving past 6100, but it's definately done climbing by then. Doesn't really strike me as a valvetrain stability issue, but I could be wrong. Does the motor break up if you rev it to, say 6500? I also wonder if that 90* bend in front of the TB is hurting you at all (airflow restriction)? I know there aren't a lot of options on these swap cars but maybe you could try a pass without the 90 and MAF (in SD mode), or with the MAF mounted straight off the front with no filter? Just spit-balling....
A shift light would help you quite a bit I'd bet. I have one in both of my cars and I'd be lost without them.
What is the gear/tire height combo on this car? Sorry.....I'm sure you posted it somewhere, but I'm being lazy. Anyway, go to this gear calculator (http://www.f-body.org/gears/) and select "1998 F-Body M6" from the drop down menu. This will fill in all the correct gear ratios for a F-bod T56. Then modify the table for your correct gear and tire height, change the redline to 7000 and click "calculate".
This will give you a decent idea of where your RPMs will be from gear to gear at a given MPH so you can start to figure out where you may want to shift the thing based on your dyno sheet. For example, I entered 28inches for the tire height and 4.11 gears. If you shifted that particular car at 7000RPM, your MPH would be 53mph. The cooresponding RPM at that MPH in 2nd gear would be between 4600 and 4700......assuming an immediate shift with no acceleration. If you shifted 2nd to 3rd at 7000, you would drop back to 5100rpm.
Bottom line of all that^^^^ is that you may have to twist that sucker well past it's peak power RPM to ensure it doesn't fall on it's face when you shift. I'd rather see it spend a little more time at higher RPM where the power is barely falling off than to fall back to and RPM that is too low. Play with that calculator a little and see what you come up with.

Oh, also.....as mentioned in the PM I sent ya, my TA (stick shift car) will lose MPH if/when it spins. Poor 60' times usually don't hurt MPH on an auto car but I've seen it time and time again on my TA. Were your 1.9 60' times because it was spinning or because you were launching it too softly?

sorry for no updates....
i have ran the car at the track...
12.1@116 1.8 60's ( i think i am short shift )
i had issues with the spray again..... im gonna retry it again this coming wendseday...
i weighed my car...
3220 with out the back seats...
that was with a full tank of gas when just over 3/4... tank is 14 or 16 i think
i will give more detail later.. after i make a few better passes

i am practicing feathering.... i have never really launched that way.. it has always been k-4k and let it fly
my tires are 275-50-15 with 373

ok... i have been to the track two more times
first track day
11.65 @121 average with 1.85 60'
11.35@129 one spray pass with a 1.9 60'
Second track day
11.52@123.34 1.8 60'
11.55@123.12 1.8 60'
11.56@123.00 1.8 60'
11.31@129 1.9 60'
on spray (only one pass)
difference between day one and two.
day 1
et streets drag radials
steel rally wheels
day 2
hoosiers drag radial ( 10 lbs lighter each )
weld drag lites up front (skinnies)
passenger seat out
i really think i am not launching the car hard enough.. my crew is telling me im not really spinning that much... i think i'm about at 3500 when im letting the clutch out..

That's real good progress man! There's definately more in it though based on your MPH. Your ET is hiding in the 60' times. I agree that you're probably not bringing it out hard enough, but my guess is you'll have a hard time bringing it out much harder than you already are on a radial tire with a stick shift.
When it's time for new tires, I would try something like a Hoosier Quick Time Pro (DOT Slick). I would also think about revving it a few 100 rpm higher, at least on the motor passes. Maybe try 7K if you're comforatble with doing it. Based on your NA MPH your car probably has low 11 potential with a 1.6ish 60'......but it will probably take 4K clutch dumps on non-radial tires to get there. Keep working at it!
EDIT: Also, my guess is your car would like a slighly steeper gear like a 4.11 on the motor. However, you probably wouldn't have enough room to finish a 1/4 pass on the spray in 4th gear, so it would be a sacrifice there.
