I keep forgetting that LS1's water pump is also driven by the belt. IMO I wouldn't attempt it because when at WOT, thats the last place I would want a voltage drop to happen. I mean you could try it. But I personally wouldn't. The alternator is there for a reason lol. Its not a "luxury" item like the A/C and P/S

Power steering and A/C should help me out.

If you got a shorter belt that just ran from the balancer to the alternator to the water pump. Then that would still help out some cause you wouldn't have the parasitic power loss of the P/S and A/C

Take the AC belt off, that's all it runs anyways. 51.5" on the PS delete belt. Keep in mind though, if it's an auto you'll have to "carefully" massage those tranny cooler lines down a bit for it to clear.
I wouldn't bypass the alternator, especially if it's a DD..........and most pure-breed racecars don't have nearly as much voltage need as a DD late model f-body.

Never run a 12 volt system without an alternator..... EVER. It's not true that most racecars don't use one, most do these days and the ones the don't are probably hurting their performance. An alternator with a fully charged battery only takes a couple of horsepower to turn and you'll have around 14 volts. Without one your voltage will most likely be below 10 volts, not good, your ignition system will suffer. A lot of mystery misses can be traced back to insufficient voltage, especially with N20.
