Factory hoods are SMC which is pressure molded. One reason auto manufacturers use this procedure is because the part can go straight from the mold to the assembly line with no special work.
The cheap fiberglass hoods are usually hand laid or sprayed into a mold. They're sold aftermarket and require a ton of prep.
The proof would be to take one of these hoods you say are exactly the same and put paint on it with no smoothing. Thats when you'd see a huge difference.

dont get cheap aftermarket. get the SLP OEM SS hood. Much better quality, i regret not saving up and getting the SLP one because fibreglass is tough to get straight, i had my hood block sanded three times and its still no where near an OEM ss hood. It will be pretty wavy but will look alright on the car. Also they usually dont line up perfect but you can get them pretty close. Sometimes the hood sticks up at the front on the sides like mine, minor but noticable to me. Also theyre alot more flim-zee-er and you cant even use youre stock hood struts cuz theyre way too strong and will break the hood when u try and close it, also putting force to open the hood when its closed, may cause it too blow open at highway speeds. Im worried about mine blowing over my windshield at highway speeds cuz its so damn flim-zee. But if youre getting it for only 160$ and dont really care about fitment and quality then go for it! thats pretty damn cheap man

You have to be careful getting those cheap fiberglass hoods. A friend of mine had one of those and it started to crack near the latch because it was not sufficiently reinforced. I think I'd just save up for something you know will last.

There are a lot of aftermarket hood vendors trying to pass off low quality as first rate. You get what you pay for is very true. After I bought Suncoast Creations, I needed to prove to myself that our Suncoast Hood was actually higher quality than my main competitor. To do this we bought one of their hoods and cut it open to see what the workmanship was really like. When we got the hood we did an external inspection and the hood looked pretty nice. I could be sanded, painted, and installed with great looking results (at least initially). When we cut open the hood to examine the construction we were shocked at the amount of thickness variation. If you hit this hood in the wrong spot with a wrench during installation you could poke right through. We took some measurements and posted the results on the Suncoast Website. We also measured the thickness variation of the two types of hood construction used at Suncoast for comaprison. Here is the graph of the data. The complete writeup is on the Suncoast website.
