Making it way too difficult and dangerous using two jacks. Put the rear wheels up on blocks. Make all the disconnects. Remove front wheels. Slide dolly (2'x3' made out of 2"x3" 0.95 wall tubing with 3/4" plywood top and super duty swivel casters) under the K-member. Attach the cherry picker to the front rad support using movers slings (or some other strap designed for vertical lifting), then lift the nose of the car off the k-member. Slide jack stands under the car. Release the picker and roll the dolly along with entire motor/tranny etc out. Safe and easy.
Not my idea, but it sure does work.

Drop the motor and trans together, and place a wooden dolly under the trans. The only real benefit to taking the wheels off is making it easier to unbolt two of the kmember bolts, and disconnect the wheel speed sensors.
Don't trust one dolly under the kmember. There was a thread not to long ago about how the dolly split in half, making it a major pita to drag out.
Cylinder heads dont need to come off, just support the middle of the kmember with a jack/dolly as you wheel it out.
Your talking about motor w/kmember out of the car correct? If so it will still want to tip back with or without the motor. So after removing the trans, carefully support the rear of the motor.

x2. Did it for the first time this past summer. Wasn't bad really, but just ensure you've disconnected everything. I'd drop it a few inches then recheck, repeat, etc. I also dropped the engine/trans as one unit. Seemed much easier that way.

Use more than 1 dolly. I have metal wheel dollies from Harbor freight that worked well. One under K-member, one under each rotor (probably unnecessary but I like to be safe), and one under the transmission. Just take your time and make sure everything is supported
I put the front up on blocks. Hook a hoist to the engine, unbolt everything, then lower the engine/k-member onto a cart, and then hook the hoist up to the bumper mounts and lift the car up. Pretty easy. A little wooden cart makes life mush easier.

and roll it out on the tires, just take off the front bumper so the shocks clear the body
