The stock 99 up gauges are dummy's they show 210 from about 170 until 230 ish. I would set the fans to come on around the opening of the thermostat. With a 160 I set mine for on at 178 off at 170. They'll still run in the 185 range with the fans running constant. If your running a 195 ( stock) I'd expect to see around 205-215 with a functional gauge.

CLT Measurement
Hi All, the above tech is all correct.
I would add, the LH & RH LS heads are the same.
Thus the CLT sensor could be found in the front OR rear of the engine. (colder water/hotter water).
Many of my installs have the ECU, center of the car mounted, with the engine installed in the rear or backwards facing.
That common CLT sensor location is in the flywheel side head position.
That read is about twenty degrees COOLER that the front head location.
The Race Cars I work with have TWO Water Temperature gauges, one for engine inlet, the other for engine water temperature outlet.

mmm, I am always thinking my car runs on the hot side, 180* thermostat, 3 core champion rad, dual 3100 cfm fans, fan 1 set on @190* off 180*, fan 2 on 210* off 195*. I think this is where the tuner set them. never had the second one on yet , but here in *alls hot FL my OBD gauge reads 195 in traffic and cools to 180/185 ish when moving.

For a STOCK car, depending on climate, the above is definitely incorrect. I live in the south and it was not uncommon for my car to see 215-225 during the summer. Low speed fan doesnt even turn on until 221 in a stock tune, so they are designed to run this temp. Lots of factors can control results and i prefer mine to be around 200 now a days.

This is all subjective to what vehicle (which gauge) what thermostat, and what fan control settings.
I agree with all information posted though. With 01ssredA4, I think he is referring to how high temps got with a/c off, the temp will go higher with ac off before the fans kick on. For example, like he said the OE table for low speed fan command is somewhere in the 22x range so you'll see the temp go to there before the fans come on. But if you're running the a/c the fans will come on regardless or based off a/c pressure. So you're much more likely to see it stay much closer to the thermostat's spec temp with the a/c on, since the fans are already on.
