My suggestion is to go to thirdgen.org . Lots more info for the iroc there.
Having a '91 speed density myself here are my suggestions assuming the 350 is close to stock:
-125 shot at the most.
-Needs to be a wet shot. A plate system is the easiest/most affordable way to do it. NOS use to make a kit, not sure if they do anymore or not.
-For the Gen1 350, retard the timing 2 degrees for every 50 shot. So if you run a 125 shot, retard it 5 degrees. Reference thirdgen.org on how to retard timing.
-get a Walbro fuel pump in that thing. 3rd gens from the ground up are were not built to handle power thrown at it like LS1s (i.e. water pump, fuel pump, bottom end, etc.)
-do more research.
Not sure on the 1/8 mile times, but if the car is still running strong, those SD 350s usually run in the 14.7 1/4 range. At that power level, guestimate a .1 sec gain for every 10hp shot you throw at it in the quarter

Yes do change the fuel pump. Compucar used to make a plate kit, don't know if they still do. NOS makes one, I still have the one for my cousin's 92z still in the box. Nitrousworks makes one too. Definately back you timing down. My buddy had a bone stock 91 z and with a 150 shot the car was running 12.50's at the track. He put a 200 shot on it for a while racing it on the street. It ran 14.09 on motor.
I have never seen any 350 tpi that I or my friends own ever run in the 14.7 range. My 91z went 13.91 bone stock on street tires. My cousin's 92z went 13.98 bone stock on street tires. On those passes we still had the spare tire and jack in the car. Those were their fastest passes stock, they were consistent 14.0 to 14.1 cars

My 89 TBI car had stock vette heads, small cam and auto and went consistent 13.6 and with a 100 shot went 12.39 on stock fuel pump. I would def look into replacing the pump though. The torque those cars make on the bottle is rediculous.
Nitrous Outlet has a TPI plate that would work wonders on your roc.

yeah ive seen bone stock gta's go mid 14s at bristol and we are around .4-.5 slower than most other tracks....ive seen some of the locals here spray those tuned port cars into the 7s 1/8th mile.....

my 305 tpi with MAF goes from 9.5x in the eighth to 8.6x on a 100 wet shot...and i didn't pull any timing, sounds retarded, but the timing mark on the plugs didn't look that bad. it really only needs 1-2 degrees pulled. gonna get the 700r4 shifting right again, or dump in a th350 and hit it with the 150 shot. lots of general info at TGO for anything and everything thirdgen related

Most LT1 6 speed cars in stock form may hit 13.7s, LS1s @ 13.3s typically
However, the 350 TPI cars 1/8 mile times are probably better to look at - all of that torque from the tuned port injection definetely gets it going. It's just the 4,200-4,400 rpm that peak hp is made that kills the top end

Yeah we are near sea level out here and the trick is just managing all the torque off the line on the street tires. They are truly dead in the water on the top end.
We had a friend's lt1 at the same track that was an auto and stock go 13.62.
We also had an ls1 6 spd car that had just a lid and the owner is a good stick driver and he went 12.91
DA and weather conditions make a big difference in all these cars.
All these passes were the cars best passes, they were a tenth slower for their consistent times.
