does gm put a tag on the bottom of the seat or seat cover? dont think ive ever looked.
i have had issues in the past trying to get panels to match up in my dash swap. buddy at the dealer has ordered me canadian parts on a few occasions. i am not sure if its darker or different, but matches my dash better than panels from a junkyard that are definately ebony that do not match.

These are the best products on the market for leather, www.leatherique.com
Here is an example of how good it is.. There are other examples out there but I didn't search much for them.

Are you sure it's not the fact that the other seat has more wear? Because after a while they have the glossy look in them, he could have painted one side the original color and made it look like new, and left the other side. I am not perfect, so don't take my word.

The plastic piece on the backside of the seats should also be BLACK and not dark grey. Plastic wont fade like leather so if the plastic isn't black and matches the leather I'd say he fucked you.

naw man.. i can lean both seats down on the back ones and there is a definite color difference, but im just gonna look into dyeing them and not worry about it anymore.. mostly because i have a new set of trickflow 225's comming that need my attention more than a pair of seats.

Sorry to say but that retard gave it to you pretty hard without lube.
Those seats are NOT Ebony
Here is a picture of my Trans Am Ebony seats
You can clearly see the difference between your "ebony" seats and mine.
