Just to update this thread.
A week or two ago, I got the old slug out of the car:
Got it down to the bare short block, bores look good, so I'll stay stock bottom end with no overbore.
So per LS1tech - I'll be using a stock as a rock bottom end, stock cubes - not even removing the oil pan, and hammer will be using a forged built forged racing fully built to the hilt aftermarket bottom end with more cubes than stock and high-compression racing pistons for racecars. Basically, a top fuel motor.

somoene needs to check the casting numbers on his block before the 5 liter race. hard to get big cubes out of a real 305 block. 3.736".

I didn't read the whole thread....(shocker I know)
If I was building a budget 305...(why? IDK) I'd snag a set of L30 heads off a 96-98 vortec truck. Those generation intakes sucked tho, spider poppet valves instead of fuel injectors. The marine intake is much better and you can run whatever size fuel injectors you need.
I used them (hand ported) to build a L31 based 383 stroker for my old 97 rcsb Z71 (hence my screen name). They made decent power and awesome torque.
~330rwhp ~410rwtq thru a 4l60e transfer case and 35" tires maxing out the stock fuel "injectors"

A better source of shedding weight would be to go with a rear seat delete kit (~50lbs). Back seats are pretty useless in a Fox or SN95 Mustang anyway.
IMO..
