Did the bumpstop mod but....
Throttle won't go all the way open from inside the car. Anyone have a way to get more cable movement with the accelerator pedal? Any way to adjust cables?

You can adjust the cables from under the hood. I had to do that to mine after the bump stop mod as well. That was years ago though.
Just look at the cables under the hood, you should be able to figure it out easy enough. Have a buddy inside the car push the pedal in for you to check progress.

I believe it can be adjusted. I think its in the Cruise Control thingy. That little cylinder like thing with all the cables running in and out of it. Dont take my word for it though, LOL.

You may have to take slack out of the pedal - ASR cluster run
which is nonadjustable. You can add a spacer or bend the gas
pedal arm.

If you have cruise control/traction control, you can take off the cover (it's the black cylindrical box in front of the battery) and turn it by hand (with the lid off so you can see the TB open/close) to see how far off you are. This is easier than having a buddy push the gas down. Once you see how far off you are, follow the cable from the cruise control/traction control back towards the firewall. You'll find a junction that pops off with clips that then allows you to take up the slack.
Obviously this works on traction control cruise control cars allowing one guy to make the adjustment alone. No idea on non TCS cars.
