No need to pull the heads to see if gaskets are backwards. Pull water pump and stick your finger through the water pump hole in block, and up into the head. If it’s backwards, you can’t obviously do that. I doubt that’s your issue however. Seems to be moving too much water for that to be the case.

When I got my LQ4 up and running in my S10, I was having similar issues that you are. I have a 160 degree stat and it was climbing toward 220 right after startup. I tried everything, until finally I got it to bleed out the trapped air (after filling the block through the water pump neck) by taking the steam vent line off, starting it up, and blipping the throttle up toward 4k RPM for about 5-10 seconds. It sounds crazy, but I saw tons of bubbles shooting out of the steam vent, and then finally just a solid stream of coolant. Slip the hose back on, and bam, temps shot down to 175 in no time. I read on another forum that these motors are notorious for needing that extra RPM to get the waterpump to flow enough to push the bubbles away from the t-stat. Obviously I wouldn't recommend this if you're already at 230+. Try it once your motor is above the temp the stat should open.

Okay I got it figured out. Turns out the autometer gauge was wrong with eletric sender. Brand new.
it runs about 200 to 210 never gets hotter
Thanks for all the help. It also had tons of air in system. By removing bypass hose it showed it had air in it. It then had a steady stream
