You can remove the belt if you want, it runs a second belt on the 98-02 f-cars ls1.
Personally, I would install the system, do a vacuum test to see if it will hold vacuum, and then replace the drier and charge the system. working AC is very nice to have.

that being said, i cut mine out. I wanted a clean, no frills engine bay without all the clutter, same reason i deleted the power steering. when my hood opens, you'll see a LSX 454 and that's about it
Then again, it's a half-*** show car and not a DD, plus i can handle manual steering and no AC so i don't mind. In the summer, I can't get to work without smelling like BO and being drenched in sweat. I can't take my GF on a date in the car because we'd both melt before we got to where we were going.
Going on a cruise isn't much fun, love the windows down, but sometimes it's nice to have ice forming on your skin while listening to some tunes and taking it easy. Everywhere I go I get to breathe the nice smog, burning coolant, and oil from every beaters exhaust, but hey, I can't roll my windows up in 108* heat....
Unless it's a track car, or your AC is non-functional and you REALLY can't fix it. Just keep it, you'll be doing yourself a favor, I promise.
Manning up and ditching AC is a bit drastic. In that scenario, why not man up and go straight headers, it saves weight. Leave out the power steering, that saves a bit of weight and HP too. You could even hollow out the front and rear bumpers, chop out any interior panels, unless they are used for support...
I like to enjoy the car in every situation and passengers don't always look past the no AC thing because we have a big motor. My firebird has never had AC and I've driven it daily for 3 years. It does get old though
