Default can you replace the disk?

Can you just swap out the disk or disks if you feel the clutch is almost worn?

If you liked it just get a new disc and resurface the other parts.

How much do you resurface each? any machine shop should be able to do it right?

Not sure on exact price every machine shop is differant but it's a hell of alot cheaper than a new flywheel/press plate. make a few phone calls to some local shops and get a few estimates.
