The bore in the gasket must be larger than both the bore of the block and the heads. So you match whichever is larger.

THIS! Your gasket must be the same or just larger than whichever is the larger bore, block or chamber!

That being said, you do need to run the larger bore gasket for the 317 heads on an LS1, because those chambers are wide!

Those would work great!

ive always bought the gasket to the engine, like if i put 5.3 heads on a 5.7 engine id put 5.7 gaskets, well i reckon thats right sorry guys, I screwed that up, i guess i would use 6.0 gaskets on a 5.7 engine, damn sorry op

That i do believe they do, try one of the sponsers sites to the right, they sell gaskets with different thickness, Or you could run stock gasket an gain a tad of compression, Depending what your plans are?
